Keeping seeds separate is the first step. I like to put them in liquor bottle bags, label them with a SharpieTM, and hang them on a piece of twine strung above the kitchen sink. This way they don't collect any excessive moisture (as they might in a Zip-locTM) before I get around to the sowing them.
